Sometimes in the Chef day, we get to introduce you to new and different flavors..like, Sourie , a popular pickled condiment from Chef Nav's Guyana 🇬🇾!
Sourie, also known as Bilimbi, is a small cucumber like fruit with a naturally acidic flavor. While we prepare it a few different ways, our favorite is to lightly boil the fresh bilimbi fruit, combine with whole and sliced mild and hot peppers, cups of whole garlic cloves, few bay leaves and a light seasoned vinegar blend.
Stored and aged for weeks to months, the fruit and peppers break down, slowly absorbing all the flavors and when lightly mashed to serve, it adds a dimensional of flavor that is unlike any other condiment! Shown in the top left pic.
Pairing especially well with Indo Caribbean flavors, we introduced our prepared Sourie along with pickled Habanero and Jalapeño peppers.
Accompanied at our recent Harvest Fresh Vegan dinner of Marinated Jackfruit Salad, and a seven curry inspired menu of veggie curries and dishes!
