🥣 The Ultimate Peanut Butter Cookies
(Yields ~11 large, 15 medium, or 26 mini cookies)
Ingredients:
Unsalted Butter (Softened): 200g (¾ cup + 1 tbsp / 1¾ sticks)
Creamy Peanut Butter (Use Jif or Skippy!): 220g (1 cup)
Brown Sugar: 200g (1 cup packed)
Granulated Sugar: 150g (¾ cup)
Large Eggs: 165g (3 large eggs)
Vanilla Extract: 14g (1 tbsp)
All-Purpose Flour: 395g (3¼ cups, spooned & leveled)
Baking Powder: 9g (1¾ tsp)
Cornstarch: 6.5g (1¾ tsp)
Baking Soda: 3g (⅝ tsp)
Fine Sea Salt: 3g (½ tsp)
👩🍳 Instructions:
1. Cream: Cream butter, peanut butter, brown sugar, and granulated sugar together until smooth and lightened.
2. Emulsify: Mix in eggs one at a time, followed by the vanilla extract.
3. Combine: Whisk dry ingredients (flour, baking powder, cornstarch, soda, salt) together, then fold into wet ingredients just until combined.
4. Scoop & Chill: Portion into dough balls and chill in the fridge for at least 1 hour (or freeze for later!).
5. Bake: Bake at 325°F (163°C) on a parchment-lined pan:
🍪 Bakery Size (3.5 oz / 100g): Bake 18–22 mins
🍪 Medium Size (2.5 oz / 70g): Bake 14–16 mins
🍪 Mini Size (1.5 oz / 42g): Bake 10–12 mins
💡 Pro Tip: Baking at 325°F keeps the bottoms from over-browning while keeping the centers incredibly soft and dense. If your cookies spread a little unevenly out of the oven, take a large round glass or cutter and “scoot” the warm edges back into a perfect circle!
If you want to make the dough and freeze for later; scoop your dough balls onto your tray and “pre-freeze” for a few hours and then transfer to a ziplock bag. When you want a cookie or cookies, pull out your dough balls and bake! No mess required!!!
