Dear friends and family,

A beautiful, young boy by the name of Lorenzo Van Dine passed away yesterday in a horrific car accident. Lorenzo was just 6 years old.

Lorenzo played baseball, football and wrestled for our town of Mount Olive, NJ.

This devastating accident comes a day before Christmas … something that Lorenzo’s mother didn’t expect to bare.

As September 11 approaches... I would be remiss to not take a moment to thank those and pray for those that gave the ultimate sacrifice.

Each year this day approaches ... I cannot help to think of those days when I was a chef @ Windows on The World on top of The World Trade Center - North Tower.... I remember it like yesterday.

Everyday I went to work.... it was in the elevator .... quick stop on the 80th floor... transfer onto the next elevator shaft that took you; to what it seemed and felt like.... the top of the world.

By 10 am ... I was fully suited. I left the locker room on the 105th floor... made my rounds to say hello to the banquet and pastry team... followed by going upstairs to meet the rest of my chef team on the 106th.

I left Windows on The World the fall of 2000 to open up ONE CPS Restaurant with David Burke Plaza Hotel. Never would I have thought staring out onto Central Park West that two planes would collide into the buildings I worked in just less than a year prior.




I woke up this morning flying through old photos... and the memories of my years being a chef in New York City collided in different states of emotion. A state of joy, happiness, excitement... but also a state of anger, sadness... at times, disgust.

The late 90’s to mid 2000’s was an incredible moment for the restaurant business.

I opened up Caviar and Banana Restaurant on 24th Street in 2003 alongside the son of a culinary Icon... Pierre Troisgros. His son...Claude and I opened this restaurant pounding the edge of classic French technique cuisine meets Brazi!... Incredible!

I was later to be The Exexutive Chef of the famed China Grill Restaurant on 57th Street (CBS BLACKROCK BUILDING)... Working alongside Jefferey Chodrow (CEO/Owner China Grill Management) cooking modern Asian cuisine. An epic moment of my life where I met some and developed some of the most beautiful relationships I could ever imagine.

Working side by side with Daniel Boulud, Charlie Palmer, Jean-George, Michel Roux.... was indescribable. The opportunity to watch, experience the development of their philosophy was priceless.

Simply a moment in my career as a Chef that brings memories of all sorts. The ultimate highs... ultimate lows... struggle.... excitement.... intensity.

I remember one night service at Restaurant Daniel where Alex Lee (Executive Chef) had me in tears of anger because nothing I cooked was acceptable.. To have someone like this take your plate and dump it in the garbage with disgust was beyond humbling... but then again, over the years... it developed my philosophy...as a chef, “.... what NOT to do”

But at the end of the day... all these incredible memories and moments back in New York City always reminds me of that very day. The day 2,996 lives were lost.

To those 2,996.... I pray that your spirit lives in eternal peace.

For those who lost loved ones.... For those that suffer to this day ....

I pray that Our Heavenly Father and The Holy Spirit bestows peace, love and forgiveness in your hearts.

September 11th... 2001. A day that rings in infamy.

Friends and Family,

We hope you are well!

On September 11 & 12th .... my daughter Grace and her team (NJ BATBUSTERS) will be playing in a tournament in Hamilton, NJ ... called The Pink Ribbon Breast Cancer Tournament.

ALL the proceeds of this tournament will be going The Pink Ribbon Softball Inc; again, to support and help with the ongoing financial fight fight to combat this horrible disease that affect millions each year.

On Behalf of my daughter Grace... we are asking for donations.

However big or small... your donation will absolutely make a difference.

Jennifer and I have attached a photo of our VENMO account. If you can find yourself able to donate... we are sincerely and truly grateful.

Before September 8th... we will write a check in its entirety on behalf of all your donations.

We would like to thank Kelly Turner for her recommendation on a local painter.

This gentlemen painted our whole entire house in a week and a half..... all by himself.

He removed every railing... every wall fixture.... every ceiling light to ensure things weren’t just painted around ..... but painted thoroughly.
