Today, we’re celebrating the birthday of the woman behind Molly’s!

While Molly’s has become a place for great food, thoughtful cocktails, and good company, at the heart of it all is Molly herself — and the people and community she’s built around this place.

When asked what her favorite thing about Molly’s is, her answer was simple: “The community that it has created.”

One of her favorite memories is the moment Molly’s stopped feeling like an idea and started feeling like a real restaurant — when the dining room went from familiar faces whose orders she knew by heart to a room full of happy strangers who would eventually become friends and regulars.

Her passion for cooking started with her mother, who was a fierce cook herself. She took chances, made weird things, and gave Molly the freedom to do the same. That sense of curiosity has clearly stayed with her. She dreams of eating her way through the Japanese countryside, experiencing open-pit cooking, and watching Indian flatbread being slapped onto the side of a hot wall — “like aerobatic baking,” as she puts it.

Another thing that stands out about Molly is how much she cares about the people around her.

She works incredibly hard, and somehow manages to balance running a restaurant with raising three girls, while still making sure the people at Molly’s are taken care of. She has a way of paying attention to the people around her — noticing when someone needs a little extra support, celebrating the wins, and making sure her team knows they’re valued. Her care for the people at Molly’s is something you feel every day, and it’s a big part of what makes Molly’s feel like the community she’s so proud of.

This year, she says she’s especially proud of the kitchen and bar — the consistency, creativity, and sheer amount of food and drink they put out every day. She’s also proud of the relationships we’ve built with local growers and the privilege of serving produce that comes from such incredible people.

And when she’s not at Molly’s, her perfect day looks a little different: time with her husband, Ben and her girls, a long walk, and roasting or grilling something good. She loves swimming in the ocean, has always been curious about food and places she hasn’t experienced yet, and secretly thinks she’d make a pretty good private investigator.

As Molly looks toward another year, she hopes it brings “clarity, change, new concepts and pockets of exhausting laughter.”

We hope it brings all of that and more. We’re incredibly lucky to have someone who works as hard as Molly does, cares as deeply as she does, and never stops checking in on the people around her. She has built so much more than a restaurant — she’s built a place where people feel cared for, and we’re grateful to be a part of it.

The answer is always our favorite: Absolutely.

Made with basil picked from our garden beds, muddled with a lemon wedge and shaken with Junipero Gin, Lillet Blanc, limoncello, lemon juice, and a touch of simple syrup, it’s bright, refreshing, and everything we love about summer in a glass.

It’s one of those cocktails guests ask about long after basil season has passed, but our Basil Martini is truly a seasonal favorite. We make it when our garden is growing and the basil is at its freshest—so when it’s here, it’s time to enjoy it.

Some of the best dishes start just a few miles down the road.

This week’s pasta special brings together local patty pan squash from Polsgrove Hill Farm and summer squash and zucchini from Schell Produce, gently folded into a rich garlic cream sauce. It’s finished with freshly grated Parmesan and basil picked from our own garden beds, then served with a slice of Ben’s fresh bread.

It’s the kind of meal that celebrates the season, simple, fresh, and built around ingredients at their peak. Every ingredient has a story, and we’re grateful to the local growers who make dishes like this possible.

Some cocktails are more than a recipe, they’re a memory

The Monkeypod Mai Tai was one of Molly’s parents’ favorite drinks from the Monkeypod Kitchen while they were living in Hawaii. This week we’re honored to feature our version in memory of Molly’s mom, Cathy.

Made with Denizen white rum, Planteray Jamaican rum, Dry Curacao, fresh lime, orgeat, a float of Kraken spiced rum and topped with passionfruit foam, it’s bright, tropical and meant to be savored.

Meet Claire, the talent behind the desserts at Molly’s!

Claire joined our team in May 2024 at Market Street Pizza, where she worked prep and the line. Since January, she’s been creating the majority of the desserts for both Molly’s and Market Street, while still jumping in to help our front-of-house team at Market Street on some evenings. So if she looks familiar, there’s a good chance you’ve seen her there!

One of Claire’s favorite things about working here is the freedom to experiment with new recipes and ideas. She loves challenging herself with unfamiliar techniques, developing her pastry skills, and creating desserts that celebrate the best local, seasonal ingredients. Keeping the dessert menu fresh with what’s growing around us is one of the most rewarding parts of her work.

When asked about her favorite dessert to make, Claire said it’s always the next one she’s dreaming up. Right now, she’s imagining a vanilla layer cake with lemon curd and raspberry jam—two of her favorite flavors. Outside of baking, she loves cooking Middle Eastern dishes like hummus, baba ganoush, and falafel, a passion that began years ago while working at a falafel restaurant in Iowa City, where she also met her partner.

Whether you’re ending your meal with one of her desserts or saying hello to her at Market Street, chances are you’ve experienced a little bit of Claire’s creativity and hospitality. We’re lucky to have her making our menus a little sweeter!

Meet Sam, our Cook & Expo!

Sam has been part of the Molly’s kitchen since December 2022, and if you’ve ever peeked into the food window during service, there’s a good chance you’ve seen her there right in the middle of the action.

One of her favorite things about working at Molly’s is the growth she’s experienced, as well as the knowledge and insight shared by her coworkers and chefs—especially Jacob. It’s been a place where she’s been able to learn, develop, and continue leveling up her craft.

If you’re deciding what to order, Sam recommends our nightly Pasta Special. The house-made noodles are always fresh, and the rotating sauces mean there’s something new to try every time you visit. Plus, as she puts it, who doesn’t love carbs?

When she’s behind the line, her go-to dish to cook is the 5 Spice Pork Bowl. With a love for Asian fusion flavors, she especially highlights the house-made kimchi as something she can’t get enough of.

Meet Justin, our Sauté Cook!

Justin has been part of the Molly’s team for three years, but his journey started in the front of house as a host before making the move to the kitchen. One of his favorite things about working at Molly’s is the opportunity to cook with high-quality, unique ingredients. Long before he worked here, he was a customer himself, and says his love for Molly’s began as a kid after trying our burger.

If you’re looking for Justin’s recommendation, it’s our Crispy Brussels Sprouts. He laughs that he spent years trying to convince his mom to give Brussels sprouts another chance, and Molly’s version was finally the one that won her over. It’s a story we hear often—our crispy Brussels, tossed in a Thai gastrique and topped with five-spice cashews, have a way of turning even the biggest skeptics into fans.

When he’s behind the line, Justin’s favorite dish to prepare is the Spinach Artichoke Dip. From massaging garlic oil into the spinach to folding in confit garlic and chili flakes, he enjoys the process just as much as the finished dish. We're serving Seared California White Bass, a seasonal fish the from Southern California coast that's prized for its mild flavor and beautiful flaky texture. It's seared over local roasted broccolini from Schell Produce and finished with a classic Veracruz sauce of tomatoes, capers, olives, garlic and onion for a bright, savory finish.
