Angel and Silverton soft-opened the weekend of Jan. 7, after the final blessing of the fire marshal Jan. 6. The restaurant intended to open Jan. 4, but owner Mark Burnett was delayed a

fter an inspection that day. The restaurant will officially open Tuesday, Jan. 10, according to general manager Julio Valera. The restaurant specializes in locally sourced steaks and classic American fare, including what Burnett calls "wood-fired food," a cheeky reference to the restaurant's fiery history. Burnett rebuilt the restaurant after a fire destroyed the former building in 2014. Flames have plagued the MarKum Inn for years, with at least two fires in recent history closing the restaurant for periods of time. In 1950, the restaurant was known as the Marquam Tavern, before it crumbled in a blaze and reopened in the '70s. "(A Marquam local)’s wife collects matchbooks," Burnett says, holding a small white matchbook with worn edges. "Sully and Vi owned the restaurant, or tavern as it was known then, the Marquam Tavern, ... and we loved this: 'Easy to find, hard to leave,' was their logo." The MarKum Inn is hard to miss: The large rancher-style sign juts out over Highway 213 in the intersection of Marquam, where there's little besides a small store and a church. Its popularity with Salem, Silverton, Mt. Angel and various Marion County ranchers kept the restaurant alive for over 100 years. Now, under new ownership, that popularity has no sign of slowing. We've been working on this one behind the bar for a while, and it's finally on the menu: our signature espresso martini.

It starts with fresh espresso, then everyone's favorite... Tito's, and just enough vanilla and hazelnut to round it out. You get the coffee first, then the warmth on the back end. Smooth, not too sweet, with that nice foam on top.

It's a good one after dinner, or for when you want something more interesting than a nightcap. It's even better out on the patio once the evening cools off.

We're pouring it every night we're open, so come out to Mt. Angel and tell us what you think. It's brand new and we want to hear how we did.

We've got a good week going in the kitchen, and it's the kind of week that only happens in August.

The local heirloom tomatoes came in beautiful, so we put them where you can taste them. They're on the Caprese Pizza with fresh mozzarella and basil, and piled into the BLTA on grilled Texas toast with bacon, lettuce and avocado. The local strawberries are just as good right now, so we're baking them into a puff pastry tart and serving it with vanilla ice cream.

Here's what we're cooking through Sunday:

• Caprese Pizza: local heirloom tomatoes, fresh mozzarella, fresh basil
• BLTA: grilled Texas toast, bacon, lettuce, heirloom tomatoes, avocado, with choice of side
• Strawberry Tart: local strawberries and puff pastry, served with vanilla ice cream
• Breakfast Tacos: three tortillas, scrambled eggs, pico, cheddar, breakfast potatoes
• Breakfast Sandwich: grilled Texas toast, arugula, tomato, bacon, cheddar, scrambled eggs

If you're out our way this weekend, breakfast is Saturday and Sunday from 11 a.m. to 2 p.m.

Come see us while the tomatoes and berries are still this good. Bring the family or pull up a stool at the bar. We'd love to have you.

Fair warning: the mini Highland cows do not stay on the shelf long. The Markum Merch shelf here in Mt. Angel is stocked again, and that little guy is so fun!

Kids spot him from across the dining room. Adults pretend they're buying him for the kids. Each one comes wearing his own Markum Inn bandana, so honestly he's staff at this point.

The rest of the shelf is the stuff people ask about after a good meal. Glassware for the home bar, a mug that holds a real cup of coffee, and the hoodie that turns into the unofficial uniform around here.

Tonight's dinner special at The Markum Inn in Mt. Angel: Salmon cakes with hollandaise.

You've seen the salmon cakes on the Fresh Sheet as an appetizer. Tonight the kitchen is building them into a full dinner plate. Hollandaise over the top, rice and sautéed green beans alongside. It's rich without being heavy, and the hollandaise does most of the talking.

Tonight's plate:

• Salmon cakes topped with hollandaise
• Served with rice
• Sautéed green beans

This one is here for the night. When the kitchen runs out, that's it, so if it sounds good, tonight is the night to make the drive out to Mt. Angel.

There's room at the bar, room on the patio, and room for the whole table if you want to bring everybody. Come as you are.
