Top chefs and experts agree: wrapping your fish in cheese cloth reduces moisture and preserves quality and freshness. Despite our intuition, moisture is the enemy when it comes to food; it’s where microbes like to grow. So we take the extra step and wrap our fresh fillets so you don’t have to. While most food companies are trying to add water to your foods (water = more weight) we remove unnecessary water to deliver higher quality and better flavor. For next level care of your fillets remove the cheese cloth and wrap with paper towels or fresh cheese cloth until you’re ready to cook. We guarantee you’ll notice the difference.

Spot prawn season is coming to a close April 30th.

The reason why we are a more sustainable choice is because our products are sourced from more responsible providers. Our fishermen focus on utilizing the most efficient and environmentally conscious ways to fill our boxes. Being aware of what we take and how our systems recover are important to keeping our industry and oceans healthy. By connecting these hard working fishermen to you, we create a market and community in which we can provide a demand for bycatch species or fishermen that use methods like long line fishing or deep set buoy gear. Long lining is a method in which length of hooks on lines are deployed at depth and are set for a period of time. These lines are then brought up and fish that are hooked are selectively harvested. Another method, deep set buoy gear, employs a hook and line system where a floatation device is deployed on the surface from which a single weighted line hangs with baited hooks attached. Via these methods, commercial fisherman can be deliberate with their hooks, bait, and location of fishing in order to target species thus avoiding damage to other parts of the ecosystem.

What makes the collar of fish so special? We often sell the collar of fish as a separate cut due to its great quality and uniqueness in flavor. The is such a prized piece because it contains the best marbling and moisture. Being so close to the belly and fin bones, the collar develops a nice fatty flavor. This meat, filled with collagen and Omega-3s, results in a healthy bone/skin structure and brain development. Collars are not only nutritious but also have quite the charm as a finger food. Previously known as a throw-away cut, these beautiful pieces have a history of being thrown out and discarded but here at Real Good Fish, we show love to every single bit of fish that passes through our hands. Some fish collars we carry are our Smoked King Salmon and Bluefin Collars, which are always a hit! From marinades to soup bases, the options in this category also provide you the components of dinner that would usually take some preparation time. In this post, we are showing off our Miso Marinated Black Cod. This use of Black Cod is deliciously velvety and flaky with flavorful bursts of umami. We provide two options for this dish: we have fresh fish that can be purchased from the store and a recipe to follow or a pre-marinated product you can also buy from our site. Providing scallops as a reputable source is as important to us as it is to you. Scallops are considered a higher end seafood and are thus pricier. Did you know that some less reputable sources will try to avoid the costs by using imitation scallops? These “scallops” are made by using a cookie cutter shaped tool to cut out round sections from skate or shark species. These fake scallops will be uniform in texture with vertical striations. With artificial scallop flavors, these are not only marketed falsely but also are unsustainable in practice. These cartilaginous fish are often caught and killed in ways that harm the environment more than help such as trawling.

Creamy Lemon Garlic Scallops are an elevation of scallops that you can find on many restaurant menus. The acidic kiss of lemon brings out even more sweetness from the scallop and the sauce, made from reducing wine or broth in the pan, adds an additional complex creaminess. An easy and quick recipe, this requires minimal preparation and cooking time since the scallops are already shucked and cook very quickly. When cooking this recipe, the essential step of searing the scallops should never be missed. Searing can be ensured by placing dry scallops on a hot pan with little oil. The scallop should develop a crust and some color. By doing this on both sides, the scallop will be fully cooked with a perfectly soft center and have an enhanced savoriness. In a future post, we will go over some of the precautions that you should take when sourcing your scallops (especially if they aren’t scallops at all!).
