sirloin ground in-house, we don’t throw things away so old bread into crumbs with the finest dairy, basil oil, Parmesan bescialmela, NEW bread. YUM! We have plenty of these today, FRIDAY.

Speaking of not throwing things away; when weighing this months tomato scraps for hot sauce base I was pleased to learn we rescued 15 lbs of ends and tops unsuitable for slices. That’s $60. That’s money, honey. Running a restaurant is often times less about making good food and more about the logistics surrounding it. Thats food for the brain.🧠
