A personal address from our Executive Chef Freddie Ledet
On Wednesday January 2, 2013 Parrie’s Louisiana Grill opened its doors for the first time as we began our “SOFT OPENING”. We are extremely humbled and appreciative of the support we have received from the community and we extend our deepest and
heartfelt thanks. The feedback has been very positive and constructive. We can never demonstrate our appreciation for the patience we have received from about 90% of the customers that have visited us so far.
We are not officially open but we have been accepting customers. A “SOFT OPENING” is a chance for us to train our staff, develop strategies, find equipment issues, tweak our recipes and work out our kinks so that, when the time comes for our “GRAND OPENING” we will be prepared to give our best.
We would also like to extend a very BIG THANK YOU to those wonderful people who have defended us, spoke up for us and for helping people understand what a “SOFT OPENING” is about.
Personally, Chef Freddie Ledet extends his deepest sincere thanks for those who have shown their support and belief in him and the staff of Parrie’s. We couldn’t ask for much more.
So far, over the past few days we have encountered many issues. We had some issues with some of our dishes being overly salted, temperature problems, timing problems and equipment problems. This is the purpose of a soft opening and it has been working for
us very well. Each day the management meets several times a day to discuss the event of
the day, problems we have discovered, and then we discuss different remedies.
We have tweaked our recipes and continue to do so. Each day we work on our timing, prep systems and plating of our dishes to help minimize temperature issues. We are currently working on changing out some equipment to address our food temperature
issues. We have changed certain products that we had been using, to products that we find work better for our recipes.
In the initial outset of putting Parrie’s together we made a promise. Our promise is that we will strive to give our very best each and every day. We will never settle for anything
less than giving our best. We never strive for perfection because we believe there is no such thing as perfection, because we believe that we CAN ALWAYS do better and so that is our mission to strive to get better every day. We promised that we will be active in our community to reflect our sincere thanks, to help build a better community, celebrate our culture and our heritage. New Orleans is not the only great city in Louisiana and about time people take notice of just great Morgan City is and can be.
Again we extend our deepest heartfelt and sincere gratitude for the support, patience and understanding.
