It is time again to start making sauerkraut at Venice To Madrid! It is always an exciting time that coincides with the fall harvest of fresh cabbage, root vegetables, squash, onions, beans, garlic and more!

We make sure our restaurant refrigerator has fresh jars of sauerkraut on hand and is on the menu. We serve sauerkraut on sourdough. Sourdough also relies on the process of fermentation creating good bacteria and microbes!

We can't stress enough the importance of getting some fermented food on your plate to aid your microbiome, the central nervous system of our digestive system and beyond. Studies show that fermented foods impact both our physical and our mental health!

We even mix kimchi in our breakfast eggs. It is unbelievably delicious!

Our ancestors lived on sauerkraut, especially when food was scarce. Some stored it in the basement in wood barrels and fed large families. When mass food production took over, home sauerkraut gave way to store bought canned kraut depleted of all its nutritional value.

Next time you are at our restaurant give our fermented food plates a try. We also serve kimchi, kombucha, and on occasion our own tofu, tempeh, miso, and koji that we use to elevate flavors and umami! Try it---your digestive system will love you!

Venice to Madrid is back! Thursday, Friday, Saturday featuring FOOD FROM SCRATCH, WINES and MEADS made in house from locally sourced ingredients, with a menu directed towards clean, healthy blue zone living. 👍

We will be closed this week - Harford Fair Week - and will be back open next Thursday, August 27 with regular hours and more interesting food & wine!
