Totally missing our macarons!

Today is Macaron Day, and if you live in France, you already know what that means. Every patisserie window will be stacked with those little rounds of almond meringue, sandwiched with ganache or buttercream, in colors that look more like a paint palette than a dessert case.

The French macaron as we know it today, two shells with a generous filling in between, is actually a relatively recent invention. The original macaron was a single, unfilled almond cookie, and versions of it have been made in France for centuries.

The filled sandwich style is a 20th-century development, and it was Pierre Hermé who really pushed the idea into new territory, pairing flavors no one had thought to combine before: rose with raspberry and lychee, milk chocolate with passion fruit, quince with rose.

He loved the macaron so much that in the mid-2000s, he launched an entire day in its honor. March 20th became Jour du Macaron, and it has been going strong ever since, with patisseries raising money for charity and people across France finding absolutely any excuse to eat more of them.

I am beyond grateful for the wonderful people in this community—customers who became familiar faces, and familiar faces who became friends. It has truly been my honor to serve Monticello for the past five years. I have loved feeding people and watching faces light up over food made with care. As all things do, our time has come to an end. For our final week, we’re serving Chicken Jalapeño Popper Soup—voted everyone’s favorite in our customer survey.
