It’s no secret that brisket is an expensive protein to barbecue. But that’s why you gotta get resourceful. I thought I’d share how we repurpose the byproduct from our trimmings that eliminates any of the beef going in the bin.

A big spread in the middle of the table, everybody reaching in, sharing, everybody smiling. I don’t think there’s a better way to enjoy BBQ, and it reminds me every time how much happiness food can bring. God bless days like these.

Just wanna give a huge shoutout to Bar-A-BBQ in Montgomery, Texas. Coop and his team are incredible, and I’m grateful I got to spend the last couple days working alongside them and taking in so much.

This crew cares about every single facet of this operation. You can see the blood, sweat, and tears they put into every day they open their doors. That level of care shows up in the food, the people, and everything happening behind the scenes.

They held nothing back. Every question I asked, every process I wanted to understand, they were willing to share, explain, and teach. That kind of generosity says a lot about the people they are.

I did my best to work hard and bring some value in return. If they were willing to give me their time and knowledge, I wanted to earn my place alongside them and help however I could.

I went down there with a simple goal: be a little better than I was yesterday. I’m coming home with plenty to work on, a ton of knowledge, and even more respect for the BBQ industry.

Special shoutout to Alec, Lance, and Pedro for letting me invade their pit room and answering all my off-the-wall questions over the last couple days. 😂

Coop and crew, thank you for welcoming me in and treating me like part of the team. This trip meant a lot to me, and I can’t wait to put what I learned to work back home. Much love and respect, can’t wait to watch you guys continue to crush 🤘

I know I tell y’all to skip the line and order ahead pretty often.

But if you ever have the time, the line is one of my favorite parts of BBQ. You end up talking to the person next to you, swapping stories, and leaving with a few new friends. I love coming out and chatting with y’all while you wait.

I’ll be honest, making sausage was never on my list of things I wanted to do.

Kolaches however, was different. I’ve always wanted to bring them to Bar-A. They mix BBQ with my love of baking, and I don’t think there’s a better breakfast than a Kolache, some Barbacoa and a good cup of coffee.
