Baked potatoes. Easy, right?

It’s also surprisingly easy to make one badly.

A good baked potato isn’t just a potato that got hot enough to become soft.

There’s a balance of opposites happening in the oven. We’re trying to soften and hydrate the starch inside… while trying to dry and crisp the skin outside.

As it heats, starch granules inside absorb water, swell and gelatinize, turning the center soft and fluffy. At the same time, moisture moves outward and escapes through the skin.

That moisture loss is what makes the skin crisp.

Pull it from the oven too early, and the center stays dense.

Trap too much moisture, and the flesh gets heavy while the skin goes soft.

Then there’s timing.

The second our spuds come out of the oven, they start changing again. Steam from the hot center continues moving outward. Given enough time, it begins to soften the skin we just worked so hard to crisp.

So we cut them open and fluff them as soon as possible. That lets steam escape instead of settling back into the potato.

This makes holding baked potatoes for service its own little problem.

So we bake a limited number each shift and move them ASAP.

Simple food. Annoyingly specific chemistry and timing.

One more lunch with The Silver Spoon before we call it a week! We’re setting up at Parish Ice from 11-2!

And we’re trying something a little different today…

Today, you can grab our homemade rosemary potato buns for 50¢ each.

They’re great for burgers, sandwiches, pulled pork, breakfast sandwiches…. pretty much anything that belongs between two halves of a really good bun.

Come grab lunch, take a few buns home, and let us know if this is something y’all want to see more of!

Why so pink? Just chemistry.

Our pickled red onions get their ridiculously bright pink color from pigments they contain called anthocyanins.

It’s a simple pH change… like chemistry class, if you happened to pass.

Anthocyanins are sensitive to pH. When the onions hit our acidic vinegar brine, the change in pH alters the way those pigments absorb and reflect light, shifting what we see toward a super bright pink/red.

So, they’re tripping on acid.

Science is cool. Eat our onions.

Apparently we started a menu spotlight series last week and just forgot to tell y’all. So, we’re making it official—Part 2: The Brisket Melt.

We’re showing off some of your favorites, giving our newer folks the rundown, and maybe convincing you to branch out and try something new along the way.

The Brisket Melt magic: Tender chopped brisket with melted provolone, garlic aioli, pickled red onion & jalapeños, and dijon mustard all piled onto our house-made potato bun. This one wasted no time becoming a fan favorite.

Now watch us make one and try not to want it for lunch. 🤤
