Using salt-forward brines for short periods (30–90 minutes) draws moisture out briefly then back in, concentrating flavor and improving browning; for steaks and chops, a 30–60 minute salty brine enhances crust without making the interior overly salty, while a longer 4–12 hour brine works for thick roasts. Salt timing controls surface chemistry for better Maillard reaction and juiciness.
