To our Winnsboro family, thank you from the bottom of our hearts for welcoming us and giving our newest location a try. ❤️
We understand that what we offer may not be what some people expected when they think of “Mexican food,” especially in an area where Tex-Mex is more familiar—and that’s exactly what we set out to do. Our mission has always been to bring something different: authentic Mexican food inspired by the dishes, flavors, and traditions truly served throughout Mexico.
Tex-Mex and authentic Mexican cuisine are often grouped together, but they are very different. Tex-Mex is known for heavier use of yellow cheese, sour cream, ground beef, hard shell tacos, combo plates, and flavors shaped through Texas influence. Authentic Mexican gastronomy focuses on regional traditions, fresh ingredients, handmade elements, bold chiles, street-style dishes, and recipes passed down through generations. Neither is “wrong”—they’re simply different experiences.
Because we know everyone has different tastes, we did add a few dishes to our menu to help satisfy a wider audience, even though those items don’t necessarily align with our mission of keeping things deeply rooted in authentic Mexican gastronomy. We wanted to create a place where everyone could find something to enjoy while still staying true to who we are.
As the 4th restaurant to open in Winnsboro, we knew bringing something different would come with mixed reactions—and that’s okay. With any new business, there will be growing pains, and one thing we want to openly acknowledge is the longer wait times some of you have experienced due to staffing shortages. We know your time is valuable, and we sincerely apologize to anyone whose first experience with us was impacted by that. While we can’t erase a disappointing experience, please know we are working quickly and thoroughly to correct our mistakes, strengthen our team, and improve every day.
