Promise it’s not an actual lemon 🍋

This is our Lemon Yuzu Mousse, and right now it’s the one people keep asking for. Crack the shell and there’s a smooth lemon mousse inside with a bright yuzu center. If you haven’t had yuzu, think lemon with a floral, almost grapefruit edge.

It’s one of a whole family of mousses we make, and we’ll be showing you the rest over the next few weeks.

If there’s one you want to see first, or you’d rather watch how they’re made, tell us. We’ll work our way down the list.

The almond croissant was born as a rescue. 🥐 French bakers, generations ago, refusing to waste a day-old croissant. Syrup. Almond cream. A second bake.

Every bakery makes it their own. Ours comes from the Touya line, from a father’s pastry shop in Cognac 🇫🇷 to our ovens in South Orange County. One family tree of recipes, mastered over decades.

Cut it open and tell us your reaction. 📍 Mission Viejo + Newport Beach.
