Corn leaf wrapped grilled and marinaded Barramundi in adobo verde. Topped with arugula, shallots, cilantro, radish, Maldon smoked flaky salt, side of tortilla, and grilled lime
*Barramundi is an Asian Sea Bass. This dish is prepared in a Mexican pre-colonial way of grilled a protein in corn leaves similar to tamales; but with a protein instead of the corn meal*

Grilled Black Angus Bavette steak, marinated in adobo verde, topped with a cilantro chimichurri and Maldon smoked flaky salt, on a bed of pomme frites
*Chef suggests Medium Rare*
**Bavette is the bottom of the sirloin, a more marbled skirt steak often used in French cuisine**
