That bright orange reveal 🧡
This is Red Leicester. Like most territorial cheeses, Red Leicester use to be prolific. Now, just a few farms make the heritage recipe. Jo and David Clarke revived Red Leicester on their family farm, Sparkenhoe, in Leicestershire, England in 2005. They had no cheese making experience, but using their dairy farming expertise and original Red Leicester recipes, they created the beauty we know as Spakenhoe Red Leicester.
The cheese is iconically deep orange (er... red!). The color comes from Annatto, a flavorless plant-based dye from Annatto seeds. This mature profile is aged for 12 months instead of the usual 6, and takes over aging for the second half of the wheel’s life. The resulting cheese is nutty, rich, and super brothy. This wheel has lots of salty notes, and some sweet fruity notes. A perfect pairing for stone fruit and honey.
