SHRIMP FRIED RICE
Ingredients:
1)Small or Med raw shrimps (Blanched) or cooked shrimps
2) Cooked rice. (Do not cook rice too moist, better for fry rice if rice is drier)
3) Beaten eggs
4) Dark soy sauce any brand
5) Kikoman soy sauce ( light)
6)Salt,white pepper, sugar, msg
7)Oyster sauce
8) Sesame oil
9) Diced Spanish onion,cut green onion
10) chopped garlic
11) Beansprout (washed, drained)
12) Cooking oil
YOU CAN DECIDE HOW MUCH RICE , SHRIMPS & EGGS YOU WOULD LIKE TO MAKE YOUR FRIED RICE.
FOR MY PERSONAL TASTE ,EACH QUART RICE I'D LIKE 2 EGGS
Prepare: Use wok or deep fry pan on low heat,pour in oil, when it's warm enough, add in 1-2 tsp diced Spanish onion , stir untill light brown, add 1/2 tsp chopped garlic( optional), stir for a few seconds, pour in eggs,turn heat to med, stir well then add in rice, a little more oil to fry the rice, turn heat on high, blend rice & eggs together, make sure you keep stirring & breaking rice so it doesnt stick together,turn heat to low while you put in salt, msg(optional),Kikoman sauce, dark soy, oyster sauce, sugar. Turn heat on high & make sure mix all seasonings with rice. You have to rapidly frying your rice or it will burn. Make sure soy sauce blend in to all rice .If you can't keep up, turn heat to med. Lower the heat, then in the shrimps, white pepper, sesame oil. Turn heat on high & keep on stirring until all mixed together ,now you can taste to see it is to your liking? Then add what you needed, lastly add green onion & a handful of beansprout or less.( too much beansprout makes rice wet).Keep heat on high & stir for a couple minute then turn off.
During frying the rice with seasonings, make sure you have heat on high , it's a secret of good fried rice when you can smell a little burning fragrance .
*For Chicken fried rice, use dark or white meat chicken, cut into thin strip or cubes .
*For Beef fried rice, use any beef you like but cut into small pieces.( both chicken & beef need to be cooked after eggs added)
*For Vegetarians or ppl who don't want egg, it can be omitted & whatever veggies can be added.
