While Chef Koji returned to Japan—not only to revisit his roots, but to continue refining the art of Kaiseki.

From selecting handcrafted tableware to visiting traditional artisans, every detail reflects the philosophy behind Kaiseki: that the experience begins long before the first course is served.

The journey continued at Kaiseki Miki in Kobe, where Chef Koji reunited with Chef Osamu Miki, his longtime mentor and a person who has deeply influenced his culinary path.

While Hana Izumi takes its summer break in July, Chef Koji returned to Japan to reconnect with the traditions and people who have shaped his Kaiseki journey.

Some journeys come full circle.

This summer, Chef Koji reunited with Chef Osamu Miki, a respected senior chef and longtime friend who shares his dedication to the art of Kaiseki.

Their reunion was a beautiful reminder that true craftsmanship is built through dedication, shared experiences, and the connections formed throughout a lifetime in the culinary world.

During his visit, Chef Koji continued to learn, share, and deepen his understanding of Kaiseki—honoring the traditions that continue to inspire his culinary path.
