Chef Koji just got some seasonal seafood — fresh firefly squid (hotaruika) 🦑!

Hotaruika are small squid harvested in spring, especially famous in Japan’s Toyama Bay.

They’re known for their natural bioluminescence — they actually glow in the dark like fireflies. Delicate and slightly sweet, they’re often enjoyed lightly boiled with miso, in vinegar dishes, or simply dressed to highlight their fresh, ocean flavor.
