After two lovely years, and many new friends made, Verde (as a cooking school) has closed. Nancy is devoting all of her time now to her responsibilities as chair of the Governor's Commission on Community Service. Stay tuned, though, as she reaches out for opportunities to improve national and community service in our wonderful State.

Furnishings, art work, dishes, glassware, tables, chairs, bakeware, tableware and other great stuff for your home or place of business are for sale. Visit us on Saturday and Sunday, March 21st and 22 from 9 am to 1 pm; Saturday, March 28th from 2 pm to 5 pm and Sunday, March 29th from 9 am to 1 pm. If these dates and times are not convenient, we can see you by appointment. The school is at 10 SW Front Street, Milford.

How 2 Stock Your Pantry

This is an intense 4 hour back-to-basics seminar prepared by Chef Darin Clark. This class will give you a well rounded knowledge of how to stock your home kitchen with basic ingredients and must haves for everyday meal preparation. You will also leave with recipes and samples of items prepared as well as share a communal meal. Students should bring a notepad and writing utensils, aprons and a knife.

Included in the inventory are vegetable and chicken stocks, veal demi-glaze, fish fumet, flavored oils and flavored salts. The meal you will share is –
Brined Honey Roasted Chicken with Chicken Jus
Whipped Parmesan Potatoes
Romaine and Tomato Salad with Vinaigrette Dressing

This 4 hour seminar is scheduled on Saturday, February 28th at 10 am and cost $75. Register by contacting Nancy at [email protected]. Registration must be received by Monday, February 23d.

Join us in Milford as Chef Darrin Clark takes on a Southern adventure in cooking. He will introduce us to regional low country fare where we will discuss the history of low country food. We will explore its inception and introduction following the history and formation of the Gulf States and southern culture. Chef Clark will show us how to prepare –

Blueberry Drop Dumplings

Join our culinary instructor, Chef Darrin Clark, as we begin a new chapter in exploring classic and modern Italian cuisine. Chef Clark comes to us from the New York City area where he worked in the kitchens of Bobby Flay at Mesa Grill and Terrance Brennan at Picholine and Artisanal. In addition to being a culinary instructor, Chef Clark specializes in providing private chef services where he has worked in the homes of Tim Duncan of the San Antonio Spurs; actors Robert De Niro, Dennis Hasbert and Wendy Williams; and Johnson and Johnson pharmaceutical executive Seward Johnson. He was a featured chef on the Food Network’s “Great Chefs of the Caribbean” and was nominated “rising star” by the James Beard Foundation

We are excited to begin his association with us by teaching Italian cuisine and then moving on to Nuevo fusion cuisine which is his specialty. He melds the flavors of Europe, Asia, Latin America, the Caribbean and Africa to create unique tastes.
