Chef Les is preparing for our third-weekend-of-the-month smoked meat special. This month’s feature is smoked and slow-braised Flintstone ribs, 2 to 2.5 lb bone-in short ribs with bacon-y baked beans and collard greens. Big flavor, done right for Memorial Day weekend.
For those looking for something lighter, we’ll also have fresh pasta with wild bay scallops, fresh English peas, and a light lemon cream sauce, with the option to add morel mushrooms.
We have enough for 80 orders, so it should be a great weekend.

It’s true, your Chef is your Sommelier!
Behind the scenes for many of you, Chef John curates the Midway Mercantile wine list and stands ready to help you find just the right wine for your evening. For 8 quiet years, he has been the Mercantile Sommelier. While not trained nor certified (similar to his background as Chef), he is a student of wine from around the world, and as any of you know who attend his wine dinners, he is passionate and deeply discerning about wine.
He has begun expanding our wine list, bringing in interesting and unique wines (typically special order wines you can’t find in Utah liquor stores) he is excited to share with you all. And like any good Som, he will ask you questions about your tastes and interests and what you are eating this evening, as well as asking about your price range. He is excited to share with you delectable wines that consistently taste like a real value against price.
Most recently, he has added Ruinart Champagne, a long time favorite available alongside the Grower champagne from Michel Gonet. In the white category, he would love to introduce you to one or our new sauvignon blancs, or the new Arneis from Italy, or one of our chenin blancs – consistently his favorite surprise wine. In the red category, the Michael Martini M Squared from 2012 is a steal for an incredible bottle, and we have a great range of Syrahs along with a Cananou from Sardegna.
John invites you to ask for his help next time you are in; he will bring his warmth and knowledge but not a hard sell! He is typically in the restaurant Wednesday through Saturday evenings, but feel free to contact him by email if questions or looking for suggestions for your next visit.

Midway Mercantile still has a few reservations available for Mother’s Day! Join us from 4:00pm–10:00pm for a special evening celebrating Mom.
In addition to our regular menu, we’ll be featuring a Fresh Dungeness Crab Cake Entrée and a House-Smoked Warm Queso Dip with Wild Shrimp. Hope to celebrate with you.
