I'm excited about our new project which will be about enhancing your food.

In the meantime, I thought it might be fun to look at how we got here, my food point of view and how it came to be.

I believe everyone is influenced by family and friends and what is available and popular at the time and I will explore that later. I have also had the great fortune to be exposed to a variety of restaurants. Some may not have been fully appreciated at the time, but still had an impact.

One such restaurant is Columbia in Tampa. Sitting in the "Red Room" as a 12 year old eating black beans over very yellow (saffron) rice turned out to be a treat. Thinking about it critically, it was a lesson in simplicity and presentation.

Not all the restaurants that influenced me still exist, but thankfully Columbia apparently still thrives.

Monday through Saturday, with reservation times for the show at 5:30 p.m., 6 p.m. or 6:30 p.m. for the 7 p.m. show and at 8:30 p.m. or 9 p.m. for the 9:30 p.m. show. There are no shows on Sunday. There is a $8 cover charge per person for guests over the age of 12 for the show.

This recipe had the right amount of heat! The flavors blend well and it has fast become a favorite of many on the Crew!

Texas style chili
Not mine but it looks pretty good. I use about a dozen more peppers (arbols, japones, habanero, scorpion, cascabel, jalapeño, poblano, morita, cayenne. thai bird, Bishop's cap, and Ghost Pepper) and Shiner Bock in place of amber ale. I also don't use masa to thicken.

My personal Favorite when it comes to bean soup is Black Bean Soup. There are a lot of ways to do it and this article is great at explaining the differences.

Done well, this American classic can be a perfect dish: big-tasting, filling, nutritious and very easy to make.
