🧀🔥 CREAMY CARAMELIZED ONION BEEF PASTA — the skillet dinner that broke the internet for a reason.

INGREDIENTS (serves 4)
• 2 tbsp butter (or olive oil)
• 2 large onions, thinly sliced
• 1 lb (450g) ground beef
• 3 cloves garlic, minced
• 2 tbsp tomato paste
• 2 cups (about 250g) small pasta (ditalini, elbow, or shells)
• 2 cups beef stock
• 1 cup heavy cream
• 1/2 cup grated Parmesan
• 1 cup shredded mozzarella (or your favorite melting cheese)
• Salt & black pepper, to taste
• Fresh parsley, for garnish (optional)
INSTRUCTIONS
1️⃣ Melt the butter in a large skillet over medium heat. Add the sliced onions and cook low and slow, stirring occasionally, for 20–25 minutes until deeply golden and caramelized.
2️⃣ Add the ground beef to the skillet. Break it apart with a wooden spoon and cook until browned, 5–7 minutes.
3️⃣ Stir in the minced garlic and tomato paste. Cook for 1–2 minutes until fragrant and the paste darkens slightly.
4️⃣ Add the pasta directly to the skillet, then pour in the beef stock. Stir well, bring to a simmer, and cook until the pasta is al dente and has soaked up the flavor, about 10–12 minutes (add a splash of water if it looks dry).
5️⃣ Lower the heat and pour in the heavy cream. Stir until the sauce turns thick, glossy, and coats every piece of pasta.
6️⃣ Mix in the Parmesan until melted. Sprinkle the mozzarella evenly over the top.
7️⃣ Broil or torch the top for 1–2 minutes until the cheese is bubbly, golden, and lightly blistered.
8️⃣ Garnish with parsley, dig in while it's hot and stringy, and enjoy! 🍽️
