PSA: We would like to clear something. WE ARE NOT A GLUTEN FREE PIZZERIA. We have GF options but we are not gluten free. In order for us to be completely GF, we need to have an isolated chamber and separate ovens for only GF. If you know that you’re going to get sick with cross-contamination of gluten, then we aren’t the pizzeria for you. With that being said we do make sourdough and in its fermentation process the sourdough feeds off the gluten, minimizing the amount of gluten in flour but not 💯 GF. We use King Arthur Flour and our mother dough (natural Leven) is 25 yrs old.
