Not everything is ready the first time.

Some dishes take time.
To be tested, refined, and sometimes completely reimagined.

May feels like that too, a subtle shift, lighter, more open, more alive.

This new menu comes from that process, created for the season ahead and for moments worth celebrating, from Mother’s Day to the simple pleasure of sitting around a beautiful table.

Because in the end, it’s never just about the plate… it’s about how it makes you feel.

Strawberry, beet, basil and rhubarb ceviche with green apple « tiger milk » and chile 🌶 de árbol 🍏.

I made this recipe inspired by the summer flavors in Paris, where one of my clients was vegan and wanted fresh and healthy options for lunch. I love to look for seasonal ingredients from the country where I cook and put my Latin touch on them.
