We are excited to introduce Steven Bissell as Director of Hospitality for The William New American Chophouse & Bar.

Steven's career reflects both deep operational expertise and an entrepreneurial spirit. With nearly two decades of hospitality leadership across luxury restaurants, international openings, and award-winning concepts — including Soul Concepts, The Mina Group, Ocean 44, and Cleaverman Steakhouse, among numerous other successful restaurant launches — he brings a rare breadth of experience in guest experience, beverage programming, operations, and team development.

His passion for hospitality and commitment to excellence will shape every interaction at The William, from the first greeting to the final farewell, ensuring every visit is warm, memorable, and distinctly personal.

As we continue crafting The William, we look forward to sharing more of the people and passion behind our vision.

Our team proud to welcome Jeffrey Chouinard as General Manager of The William New American Chophouse & Bar.

Jeffrey brings more than a decade of leadership experience with some of hospitality's most respected names, including Major Food Group, Maple & Ash, Buck & Rider, and most recently the REMI Hotel Scottsdale. Throughout his career, he has earned a reputation for building high-performing teams, elevating service culture, and creating memorable guest experiences.

At The William, Jeffrey will lead our front-of-house team with one goal in mind: ensuring every guest feels genuinely welcomed, thoughtfully cared for, and eager to return. Because great hospitality isn't just about service, it's a feeling guests carry with them long after they walk out the door.

We are honored to welcome Chef Jeremy Pacheco as Executive Chef of The William New American Chophouse & Bar, opening this October at Gallery Park.

With more than 25 years of culinary leadership, Chef Pacheco has built an extraordinary career at some of the nation's most celebrated restaurants and luxury resorts, including Wynn Las Vegas, The Phoenician, The Hermosa Inn, and Genuine Concepts Restaurants. His passion for premium ingredients, thoughtful ex*****on, and innovative American cuisine has earned recognition throughout the industry.

At The William, Chef Pacheco is building a culinary program rooted in craftsmanship and seasonality, honoring the timeless spirit of the American chophouse while giving it a fresh, modern voice — a table where every guest, from their very first visit, feels like they've found somewhere worth returning to.
