This photo is of Luna's first attempt at a Charlotte Russe cake, which will be on her menu. She learned how to make this classic cake through her mentorship with Florida Academy of Baking .

On Saturday, Luna will have vegan peanut butter cookies, gluten-free chocolate chip cookies, and Snickerdoodles for purchase at the fair.

Customers will also be able to place orders from her menu for items they'd like to enjoy at a later time!

Charlotte Russe Cake is a classic European dessert that is centuries old. Lady Fingers line the bottom and sides, and it is filled with Bavarian cream and fresh fruit. Luna made a red berry version that had a touch of Chambord brushed on the Lady Fingers, raspberry puree mixed with the Bavarian cream, and chantilly cream on top with fresh strawberries, raspberries white chocolate and mint. It took Luna 5 1/2 hours to make because she made everything from scratch! It is absolutely decadently delicious!!

This week, Luna learned how to make croissants and pain au chocolat at the Florida Academy of Baking! Chef Mary Storey, of Mary Storey Confections, taught the class how to make laminated dough - which is what is used to make the flakey pastries. To laminate dough, you use a process of folding layers of butter into the dough by rolling out and turning - that's what makes it so flakey!
