How often should someone be looking inside your hood system? πŸ”₯

It comes down to two things: how much you cook, and what you cook on.

πŸ”₯ Charcoal grill or wood-fired oven: monthly. Just one puts the whole system on a monthly schedule.
πŸ“ˆ High-volume kitchen: quarterly
🍽️ Moderate volume: twice a year
πŸ“… Low volume: once a year

Here's the part a lot of kitchens miss: cleaning runs on its own trigger. It's set by the grease depth we measure at your inspection. Pull up your last report and check the reading.

Not sure where your kitchen lands? We'll help you find your schedule and keep you on it. πŸ‘‡

The grease above your cooking line is fuel, and most of it sits where nobody looks: the duct runs and the fan on the roof.

One check after your next cleaning: ask for the before-and-after photo of the rooftop fan. No fan photo, no hood-to-roof clean.

Cleaning Pros Plus leaves you a report of every access panel opened and the certificate your fire marshal asks for.

Hood cleaning gets the grease out of the parts of the system that move it: the hood over the line, the ducts running behind the wall and up through the roof, and the fan on top. That's the path a fire would travel, and that's what you're paying us for.

Filters are a different job. They lift out of the hood, they get swapped for clean ones, and they usually need attention on a much shorter cycle than the system does. We handle that too, but it's its own service β€” Grease Filter Exchange. Keeping the two separate means you're not paying system prices for filter work, and your filters stay on a schedule that matches how hard you actually cook.

It's worth knowing when you compare quotes. If a number looks low, ask what it covers. Filters only, or the hood, ducts and fan as well?

On the system side, here's what you get from us: hoods, ducts and fans cleaned to NFPA 96 Standards, a report showing what we did and what we found, and a certificate for your records.

Most of the grease you never see.

It leaves the cooking surface as v***r, gets pulled into the hood, and starts cooling the moment it hits the ductwork. As it cools, it sticks β€” and it keeps layering with every service hour.

Here's the part that catches people off guard: the heaviest buildup is rarely right under the hood. It migrates. The further the duct runs toward the fan, the more time that grease has had to cool and collect. By the time you reach the rooftop fan, you can have thick, fuel-like deposits the hood itself never showed you.

That matters because grease ignites. A fire that starts in a duct doesn't stay in the duct β€” it follows the airflow toward the fan and the roof. The run you can't see is often the one that decides how far it goes.

NFPA 96 sets cleaning frequency by cooking volume and fuel type because buildup is predictable β€” it's a function of what you cook and how often. A lapse in the schedule doesn't reset the clock. The grease is already there.

When CPP cleans a system, we clean the hood, the full duct run, and the fan β€” not just the visible sections. You get a report and a certificate documenting the work. Cleaned to NFPA 96 Standards.

Heavy grease drops out at the collar. The lighter stuff rides the full duct and settles at the fan β€” close to a heat source, in high airflow, where a fire moves fast.

Both ends build every single day your line runs. That's why cleaning frequency exists.

Every Cleaning Pros Plus service covers hoods, ducts and fans, and comes with a written report and an NFPA 96 certificate β€” the record you want on hand when an inspector shows up or a claim gets filed.

Here's something most operators don't know: your county fire marshal isn't enforcing NFPA 96 "as published." They adopt a specific edition β€” often years behind the current one β€” and then layer on local amendments that change everything from cleaning intervals to access-panel requirements to what triggers an inspection.

In California alone, counties enforce anywhere from the 2011 edition to the 2021 edition. And most have amended it further.

So if you're following "the standard" without knowing which edition your county adopted, you're not following the standard. You're guessing.

EvidLY gives you the adopted edition, the local amendments, and the exact requirement β€” so you know what applies where you operate, not just what's printed on the cover of the book.

Know your county. Know your code. Know you're covered.

Your hood system is only as clean as its weakest point.

Your hood does more than hang over the line. Every part of that system has a job β€” and when one part is neglected, the whole system falls behind.

Here's a quick walkthrough of what's actually in your exhaust system:

πŸ”² Hood β€” Captures heat, smoke, and grease-laden v***r before it spreads through your kitchen.

πŸ”² Grease Removal Devices β€” The baffles or cartridges inside the hood that knock grease out of the airstream before it moves deeper into the system.

πŸ”² Plenum β€” The chamber behind the filters that collects grease that made it past the removal devices. It builds up fast and quietly.

πŸ”² Horizontal Duct β€” Carries exhaust toward the riser. Because it's nearly flat, grease settles here and accumulates over time.

πŸ”² Riser (Vertical Duct) β€” Moves air up and out. Grease can coat the walls and collect at the base.

πŸ”² Exhaust Fan β€” The engine of the whole system. Grease in the fan housing reduces airflow and adds weight to the motor.

Every one of these surfaces gets cleaned when CPP services your hood system. Kitchen leaders who've had us out tell us the difference is visible.

We've completed 350+ services and document every one with a full report and certificate β€” cleaned to NFPA 96 Standards.

Most kitchen leaders focus on the hood. That's where the smoke disappears, so that's where attention goes.

But grease doesn't stop at the hood.

It coats the interior of every duct from the hood all the way to the exhaust fan on the roof. The fan itself β€” blades, housing, motor area β€” collects it too. By the time grease reaches the fan, it's thick, it's sticky, and if a fire starts below, it has a clear path to travel.

A hood cleaning from Cleaning Pros Plus covers all three:
βœ” Hood
βœ” Ductwork
βœ” Exhaust fan

That's what "cleaned to NFPA 96 standards" means in practice β€” not just the part you can see.

Filters are a separate service (our Grease Filter Exchange program handles those). The full-system service is the hoods, ducts, and fan.

When we finish, you receive two things: a written report and a certificate documenting the work. Not a handshake β€” actual paperwork you can put in front of an inspector, an insurance carrier, or a health department.

We're an IKECA member company. Our founder holds CECS #200452. Our crew are PECT Designated Technicians.

We've completed 350+ services and we've seen what a lapse in cleaning looks like. You don't want to.
