Looking for Food Reviewers!

Attention lovers of creamy korma! Did you know there’s a royal version of korma that most people have never tasted?

We’re talking about Shahi Korma—a rich, luxurious North Indian dish made with real nuts, aromatic spices, and dried methi leaves. In contrast, the commonly served White Korma is a much simpler, milder version, often adapted for speed and convenience in most restaurants. While both are delicious, they’re not the same dish.

At Taj, we proudly serve authentic Shahi Korma—and we’ll admit it: we’re biased. We think it’s the best.
But we also genuinely want to know what you think.

We’re inviting food reviewers with a basic understanding of Indian cuisine to participate in an at-home blind taste test:
Shahi Korma vs. White Korma. 🥄✨

To keep things fair and unbiased, we’ll be masking the color of both dishes using ratan jot, a natural tree root traditionally used in Rogan Josh to give curries a deep red hue. That way, taste—not appearance—does the talking.

Depending on the results, we’re open to offering limited weekly pre-orders of the lighter White Korma.

✨ What an amazing year at Taj! ✨
We were featured in Florida Today’s article on the Best Restaurants in Brevard—a true honor 🙏

We also received a beautiful, personal email from a Michelin-starred restaurant, offering praise and encouragement that meant the world to our team. 💌🌟

And the biggest milestone of all: we launched our chef’s dream menu—a tribute to traditional Indian cuisine, blended with the bold spirit of Indo-Chinese heritage and rare, hard-to-find regional dishes. 🍛🔥

But the road here hasn’t been easy. We started with zero experience in the restaurant industry, and learned everything the hard way. From sourcing rice from Sri Lanka for dosa due to export restrictions, to making fresh biryani rice daily, roasting and grinding our own whole spices, and even importing stone grinders from India—we’ve poured everything we have into flavor, authenticity, and quality.

Thank you to everyone who’s supported us, challenged us, and helped shape Taj into what it is today. The journey is just beginning. ❤️
