The location where Sendai A5 Beef comes from is home to the Wagyu Olympics, which is situated in one of the northernmost prefectures in Japan called Miyagi.
Here the cattle feast on Sasanishiki rice stalks along with barley grain. This as well as the fresh air and water of Miyagi help to create a robust flavor alongside astonishing marbling patterns.
Sendai Wagyu is well known for adopting the most severe grading standard of all Wagyu in Japan.
In order to be considered A5 Sendai Wagyu, the cattle must be Japanese black cattle, have a BMS 10+ to qualify and must be bred in the Miyagi prefecture. These severe grading standards makes Sendai A5 Wagyu extremely rare and sought after.
The grading criteria for Sendai beef is based on the balance of marbling and leanness, the color of meat, the fineness of texture and firmness, and fat luster.
