I wish I had known when I was young, how much I would love cooking. I probably would have gone to Culinary College. I watched “Lydia” do a special on “Poached Eggs”! My Mama Lillie loved a Poached Egg, however she never prepared one for me. I guess she never dreamed a “runny egg” would be appealing to a child.😂Anyway, I fixed one of the dishes Lydia prepared, just now. I’m sorry that I can’t recall the name of it. I used 1 can of petite diced tomatoes w/1/2 can water, some minced onion, a little garlic powder, and 1/2 tsp. Oregano(didn’t want to go overboard with too the first time…she used 1 whole clove of fresh garlic & no onion). Brought to a boil, reduced to slow boil, cracked eggs 1 at a time into a remain and eased into tomato mixture. I fixed 4. Toasted 4 slices of bread. Sooo Yummy!!!! Next time I’ll have Parmesan Cheese here!❤️
