Everyone’s been telling me the past couple of days that another storm might be coming—can you believe it? It’s already March! Iowa’s weather is truly impossible to predict.

But no matter the wind, rain, or even hail, we’re open as usual these days! Our online orders and DoorDash are also running normally.

We hope that even in this cold winter (or… spring?) you can still enjoy a hot bowl of ramen and some delicious sushi 🍣 from us.

And even though it sounds a little funny to say this in March… stay warm!

This morning at 9 AM, we had our semi-annual food safety and sanitation inspection. We’re very happy and honored to once again receive recognition from the local authorities!

In terms of food safety—especially restaurant cleanliness and the freshness of our ingredients—everything passed with no issues at all. The only small suggestion from the inspector was to add a form to keep a more detailed record of employee sick leave.

Although passing the inspection was something we expected, hearing the final result still made us feel incredibly happy and proud.

Since the very first day Ippin Ramen opened, our philosophy has always been simple and clear:
Keep the restaurant clean, use fresh ingredients, and make sure every guest can enjoy their meal with confidence and peace of mind.

This recognition is not only a confirmation of the work we’ve been doing, but also a motivation for us to keep improving and doing even better.

Thank you to all of our friends and customers for your continued support. We will keep working hard to make every bowl of ramen and every dish something you can truly enjoy and trust.

Today I want to introduce one of our appetizers — Tokoyaki!
(It’s also called Takoyaki in many places.)

Takoyaki is basically a “molten lava octopus ping-pong ball.”

It originally comes from Osaka, Japan. On the outside, it’s golden and slightly crispy. On the inside, it’s soft, creamy, and almost like hot batter lava. In the center, there’s a tender, chewy piece of octopus.

The correct way to eat it?
Take a bite → burn your tongue → lose control of your facial expression → but still say, “Wow, this is so good!”

It’s usually topped with sweet and savory sauce, Japanese mayo, and those thin bonito flakes that look like they’re dancing from the heat.

If I had to describe it in an American way, it’s like a savory pancake ball with a hidden seafood surprise inside.

In one sentence:
You know it’s going to be hot… but you’ll still end up eating six of them anyway. 😆

Since we closed on Tuesday for a break, the weeks have been flying by so fast! This morning, while I was writing a check to another company, I suddenly realized it’s already mid-February. Time really flies!

And today’s weather really makes it feel like spring is finally here!
