What’s the secret to puffy icing with no craters? 👀👇🏻

Spoiler: it’s not really a secret. It’s a few basic, foundational steps that make all the difference.

1️⃣ Icing structure is KEY.
Honestly, this is the most important part. If you don’t start with proper icing structure, you’re going to fight issues at every stage. Good icing starts with good structure.

2️⃣ For puff, think THICKK.
You want a consistency closer to toothpaste than traditional flood icing. More water = more moisture that needs to evaporate = more opportunity for holes and craters. The moisture isn’t magically “sucked” into a dry base—it has to evaporate one way or another.

3️⃣ A fan or dehydrator = extra insurance.
Neither is required, but they can help the icing crust faster. Our dehydrator has been broken for months (RIP 🫠), but a few minutes in front of a table fan does the trick and we’re good to go!
And that’s it.

✨ You don’t need to poke holes.
✨ You don’t need to pipe details onto a crusted base.
✨ You don’t need a bunch of tricks or gimmicks.
You just need good icing + the right consistency + proper structure.

Sometimes the “secret” really is just getting the basics right. 💕
