This is what we mean when we say sea to plate. 🌊🌿🍽️

Last week our chefs and friends from headed out to the farm in Tomales Bay to forage and harvest fresh seaweed — sea lettuce and nori that grows naturally right on our oyster gear in the same bay our OG Sweetwaters call home. Zero interference, allllllll ocean!

After thorough rinsing and a sun-and-wind dry, some heads to our commissary kitchen for house-made Miso Nori Butter, Spicy Nori Citrus seasoning, and rotating seaweed specials. AND some goes straight to restaurant partners like , and to play with in their own kitchens! //

Droppin' some oyster facts this morning! 🦪

Kumamoto Oysters (aka Kumis) may be tiny, but they pack seeeeriously big flavor. Originally from the Kumamoto Prefecture of Kyushu, Japan, these Eastern Pacific oysters are one of our all-time faves to grow here on the West Coast.

Taste: Buttery, succulent, with a clean finish of cucumber and melon
How we grow 'em: Tide-tumbled in seapa baskets for those deep cups and tidy shells
Where ours come from: Planted, raised and harvested by us in Tomales and Humboldt Bays
