They say, "If you can't stand the heat, stay out of the kitchen.". Well, at Capone's House of Pasta we don't have that option. But thanks to Pioneer Service and Supply (www.pioneerserviceandsupply.com) in Mars, we no longer have to make the decision! On an incredibly hot and smoky day, Rick and team braved the weather and the crazy-high air quality index today to install a new unit just for the kitchen! The team will be so happy when they try this out next week. Thank you, Rick and Pioneer!!

New to the menu at Capone's House of Pasta : Radiatorre Pasta with Creamy Pesto. Fresh Radiatori Pasta is the perfect shape for this dish. All of the nooks and crannies of this funky shaped pasta holds our creamy basil pesto sauce beautifully, making it both stunningly beautiful as well as indescribably delicious. The team at Capone's House of Pasta takes their job seriously. Led by Chef Tripp Acker, each and every plate that leaves our kitchen is the best that we can possibly make it, from the freshly-shredded imported Parmesan sprinkled on our salads to the bright, fiery sauce on our Pasta Arrabiatta to our delicious desserts, like the house-made Baklava.

This week at Capone's House of Pasta, we've added Mesquite-Roasted Chicken Ravioli in red sauce. We've taken succulent, juicy, mesquite-roasted chicken, mixed it with some sweet cream ricotta and imported grated parmesan, added a little slow-roasted garlic for an additional flavor-boost, sprinkled with some herbs and spices, and will serve this up in one of Chef Tripp's legendary red sauces. And new to the dessert menu is Dulce de Leche Cheesecake, and house-made Baklava.

At Capone's House of Pasta, you can taste the freshness. We make everything from scratch every single day, using fresh basil, parsley, lemon, eggs, aged imported Parmesan that we hand-grate, and of course, fresh pasta that everyone gets involved in making. Then, Chef Tripp pulls all of this together and turns this into the incredible dishes that come out of our kitchen. It's a little more work (ok, a lot more work) than using packaged ingredients, but it's a labor of love. Make a reservation to taste it for yourself!

We are really looking forward to this week at Capone's House of Pasta! We are rolling out some absolutely delicious Pot Roast Ravioli - slow-roasted, hand-shredded, tender and tasty pot roast, enveloped in our special egg pasta dough, simmered until almost done, then finished in some of the best-tasting, most aromatic pot roast gravy ever! Capone's House of Pasta is new to Mars, and looking to grow our team as we expand our hours and increase the days we are open. We are currently interviewing for kitchen help, to prepare all of the food and other essentials for the day, then support the kitchen team during the dinner hours, and you could be the perfect fit. Our ideal candidate is a "Swiss Army Knife" type of person that is willing to help with anything that needs to be done, learn new skills and work as an integral part of the team. No experience is necessary, but a great attitude, strong work ethic, and willingness to work as part of a close-knit team is needed.

Chef Tripp is working on the menu for the coming week, and adding some dynamite dishes! Thanks to our newest seafood supplier, we can start adding some seafood dishes to the menu - like Hot King Crab Dip, and Shrimp Fra Diavolo. By popular request, we are also adding Pot Roast Ravioli to the menu - tender bits of slow roasted, hand-shredded pot roast, seasoned with a special blend of herbs, lovingly stuffed into our hand-made dough, and topped with our signature pot roast gravy. And of course, chocolate-covered cannoli for dessert - with Cookie Butter Cream filling.

Chef Tripp has added a few things to this week's menu, including a delightful, flavorful Tuscan Fettucine, and a Cappuccino Mousse Pie that is to die for! Of course, his Chicken Parmesan is always exceptional, and very filling.
