These claws are re-freshed — but what exactly does that mean?

Florida stone crab season is open October 15th through May 1st each year. During the season, we freeze some of our fresh claws at their peak. During the off-season, we slow-thaw those freshly frozen claws, a process we call re-freshing, to preserve the flavor and texture you love from fresh stone crab.

So while we’re counting down the days until the boats are bringing in fresh claws again, consider these a little something to hold you over. 😉🦀
