Vicki B’s is back again, and this time we’re bringing you a coastal twist on a local favorite the famous Atlantic Beach Pie! 🌊

A true taste of the North Carolina coast, Atlantic Beach Pie is known for its salty-sweet Ritz cracker crust, bright lemon-lime citrus filling, and refreshing beachside flavors.

We turned that classic into our own Coastal Ritz Cheesecake featuring a Ritz cracker shortbread cookie crust, lemon-lime citrus cheesecake filling, white chocolate mousse topping, sea salt flakes, and a caramel drizzle.

This adorable alicorn cake features 3 layers of rich chocolate cake filled with chocolate fudge buttercream and finished in soft pink buttercream. Decorated with a pastel rainbow mane, rainbow wings, and lots of colorful sprinkles, it was the perfect centerpiece to celebrate June’s 5th birthday! 🌈💕

This custom double-layer quarter sheet cake was packed with funfetti flavor, filled with silky pastry cream, and finished with our signature vanilla bean buttercream. Decorated with all the classic summer beach vibes—golden sand, seashells, surfboards, beach chairs, and colorful popsicles—it was the perfect centerpiece for a sunny birthday bash and big enough to share with all her guests!
