I started working on my Kitchen Travel-Kit assembling the basic pans and utensils. Getting ready to launch the personal Cheif department.

No beer yet, but, I have formulated a plan.
Step 1. Gut the trailer of all equipment, fixtures and interior walls.
Step 2. Fabricate 4 wooden Jack Frames.
Step 3. Fabricate and attach 4 Jack Plates on the exterior walls 2 feet in from each end.
Step 4. Raise the trailer via it's stablizers 2 level inches.
Step 5. Set the Jack Frames under the Jack Plates then screw together.
Step 6. Gently lower the stablizer jacks little by little until the floor is completely separated from the walls.
Once the sub-flooring has been replaced, bolt sub-floor to frame, and the bottom wall plates have been completely replaced reverse the process slowly carefully. Once the walls are properly lined up with the sub-floor, with long screws secure the aub-floor and wall together.
Commence with project.
Now I've earned that beer.

Today started to get ready to replace the sub-floor in the Waffle Wagon when I started to notice that “Something is wrong here”. Yep, when the trailer was on the manufacturer’s floor, it was designed and built to fail. The floor all the way around every wall has water damage. Why? The trim along the bottom of the exterior had a thin film of silicon sealer that was applied after the trim was screwed on. Unlike the side trim where the screws are put in from the bottom, the from and rear trim screws were put in from the outside with no sealer on any of them and the same thin coat of silicon after it was screwed into place. The entire floor must be replaced. But there is another issue, all the walls have wooden bottom plates. This means, they too have water damage. Discovered this when I started loosening the nuts that anchors the floor to the trailer frame and started taking out the ling screws that anchors the wall to the floor. The screws just kept turning and wouldn’t back out. A few did and ate up with rust.
Now I have a new dilemma, how to jack up the walls off the floor without damaging the walls. I guess I’m going to buy myself a six pack of Michelob Ultra to think about this puzzle. Opening day is set back another week, or so.

I recently completed a local study of dining options for people with specific dietary needs. None of the local restaurants adequately meet those needs. The reason is simple: it is not part of their business model, and providing that level of service on a walk-in basis is not cost-effective. The challenges include high food costs, increased waste, specialized ingredients, and carefully planned preparation to prevent cross-contamination. Most restaurant kitchens and staff are simply not equipped to operate this way.
