- 3 cups cooked chicken, shredded
- 8 corn tortillas
- 2 cups red enchilada sauce
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 2 1/2 cups shredded Monterey Jack and cheddar blend, divided
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Chopped cilantro, optional

INSTRUCTIONS

1. Preheat oven to 375°F (190°C).

2. Lightly grease a 9x13-inch baking dish.

3. Spread a thin layer of enchilada sauce over the bottom.

4. Arrange a layer of corn tortillas over the sauce, tearing them if necessary to fit.

5. Add half of the shredded chicken.

6. Sprinkle over half of the black beans and corn.

7. Season lightly with cumin, garlic powder, and black pepper.

8. Spoon over some enchilada sauce.

9. Sprinkle with about 1 cup shredded cheese.

10. Repeat the layers with the remaining tortillas, chicken, beans, corn, sauce, and seasoning.

11. Finish with the remaining enchilada sauce.

12. Sprinkle the remaining cheese generously over the top.

INGREDIENTS

- 1 1/2 lb (680 g) boneless chicken breast, cut into chunks
- 1 1/2 lb (680 g) baby potatoes, quartered
- 3 tbsp unsalted butter, melted
- 4 garlic cloves, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan
- 1 1/2 cups shredded mozzarella
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 3/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped parsley

INSTRUCTIONS

1. Preheat oven to 400°F (205°C).

2. Lightly grease a 9x13-inch baking dish.

3. Add the quartered potatoes to the baking dish.

INSTRUCTIONS

- 3/4 cup low-sodium seafood stock
- 1/2 cup reserved pasta water
- 1/2 cup mascarpone
- 1/2 cup finely grated Parmesan
- 1 tbsp lemon juice
- 2 tbsp chopped parsley
- 1/3 cup torn basil
- Kosher salt and black pepper

Method

1. Boil the spaghetti until two minutes short of al dente. Reserve 1/2 cup pasta water.

2. Pat the shrimp dry and season. Sear in olive oil in a wide pan over medium-high induction heat, turning once. Transfer all shrimp to a plate.

3. Reduce heat to medium. Add garlic, sun-dried tomatoes and harissa. Scrape and fold for 45 seconds.

4. Add seafood stock and half the pasta water. Scrape the fond until the sauce is even.

5. Transfer the spaghetti into the pan and complete two full tong tosses until coated.

6. Switch off the induction. Fold in mascarpone, Parmesan and lemon juice. Return the shrimp gently and finish with parsley and basil.

1. Heat the oven to 400°F. Put the Boursin in the center of an ivory baking dish. Surround it with tomatoes and half the garlic. Drizzle with 2 tbsp olive oil; season with half the salt, black pepper and red pepper flakes.

2. Roast for 25–30 minutes until the tomatoes collapse and the cheese is deeply soft.

3. Meanwhile, boil the rigatoni until one minute short of al dente. Reserve 1/2 cup pasta water.

4. Pat the shrimp dry and season with the remaining salt. Sear in the remaining olive oil in a separate skillet over medium-high induction heat, turning once. Transfer every shrimp to a plate.

5. Mash the roasted garlic, tomatoes and Boursin together in the baking dish. Add rigatoni and enough pasta water to form a glossy sauce. Fold twice.

- 2 ripe Roma tomatoes, seeded and diced
- 2 tbsp chopped basil
- 1 tbsp chopped parsley
- 1 tbsp fresh lemon juice
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- Pinch of red pepper flakes

Method

1. Heat the oven to 425°F. Arrange the bread on a pale metal sheet pan and brush both sides with 3 tbsp olive oil.

2. Bake for 8–10 minutes, turning once, until crisp and deeply golden. Move the toast to a white serving platter.

3. Heat 1 tbsp olive oil in a small skillet over medium induction heat. Add the small whole shrimp in one layer. Stir and turn with a wooden spoon until almost opaque.

4. Add two-thirds of the garlic and the red pepper flakes. Cook for 30–45 seconds, then switch off the heat.

5. In a bowl, fold the tomatoes with basil, parsley, lemon juice, remaining garlic, remaining olive oil, salt and black pepper.

Method

1. Boil the rigatoni in well-salted water until one minute short of al dente. Reserve 1/2 cup pasta water and drain.

2. Season the chicken with Italian seasoning, salt and pepper. Heat olive oil in a wide ivory sauté pan over medium-high induction heat.

3. Sear the chicken without crowding until golden and cooked through, about 4 minutes per side. Transfer it to a plate and keep all the fond in the pan.

4. Reduce heat to medium. Add butter and garlic; scrape the fond for 30 seconds. Pour in the stock, then the cream, and simmer gently until slightly reduced.

5. Add the rigatoni and fold until coated. Switch off the heat before adding Parmesan and spinach. Add pasta water a little at a time until the sauce is glossy.

6. Return the chicken and its resting juices. Fold once, finish with parsley and serve.

- 3 tbsp extra-virgin olive oil

- Zest and juice of 1 lemon, divided
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
- 1 cup cherry tomatoes
- 1 lemon, cut into wedges
- 2 tbsp unsalted butter
- 2 tbsp chopped parsley
- 1 tbsp chopped dill

Method

1. Pat the shrimp completely dry. Toss with 2 tbsp olive oil, half the garlic, half the lemon zest, paprika, oregano, salt and pepper. Rest for 10 minutes.

2. Heat a ridged grill pan over medium-high induction heat. Brush the ridges with the remaining oil.

3. Lay the shrimp in one layer. Grill for about 2 minutes without disturbing, turn once with tongs, and grill 1–2 minutes more. Work in batches if needed so the shrimp do not crowd.

4. Grill the tomatoes and lemon wedges until lightly blistered. Switch off the induction.

5. Add butter, remaining garlic, remaining lemon zest, 1 tbsp lemon juice, parsley and dill. Turn the shrimp through the fresh glaze once and serve immediately.
