Ingredients:
* 1½ pounds Italian sausage, mild or hot
* 2 large bell peppers, sliced (red and green)
* 2 medium onions, thinly sliced
* 3 cloves garlic, minced
* 2 tablespoons olive oil
* ½ cup chicken broth
* 1 teaspoon Italian seasoning
* ½ teaspoon paprika
* ½ teaspoon black pepper
* Salt, to taste
* ¼ teaspoon red pepper flakes (optional)
* Fresh parsley, chopped, for garnish
* Hoagie rolls, for serving (optional)
Instructions:
1. Brown the sausages: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned on all sides. They do not need to be fully cooked yet. Transfer to a plate.
2. Cook the vegetables: Add the remaining olive oil to the same skillet. Add the sliced onions and bell peppers. Cook for 6ā8 minutes, stirring occasionally, until softened.
3. Add the garlic: Stir in the minced garlic, Italian seasoning, paprika, black pepper, and red pepper flakes, if using. Cook for about 30 seconds until fragrant.
4. Combine everything: Pour in the chicken broth and scrape up the flavorful browned bits from the bottom of the skillet.
5. Simmer: Return the sausages to the pan. Cover and cook over medium-low heat for 10ā15 minutes, or until the sausages are cooked through and reach 160°F (71°C) for pork sausage or 165°F (74°C) for poultry sausage.
6. Finish and serve: Taste and adjust the seasoning. Sprinkle with fresh parsley and serve hot with your favorite sides or in toasted hoagie rolls.
Tip: For extra flavor, let the onions and peppers cook a little longer until lightly caramelized. A splash of balsamic vinegar can also add a delicious sweet-tangy finish.
