The opening concept was incredibly simple. Make everything you sell, from the breads, to the cookies, to the honey mustard, to the tabouli, etc. Manchester is a small town of less than 3,000 people in southwestern Vermont. Periodically, the town is saturated with tourists, yet the success or failure of any business depends on local support. Without that, any business is doomed. Prior to opening Zo
ey’s Deli, the consensus was that Manchester could not support another restaurant, especially a ‘lunch only’ restaurant since there were 18 establishments that, at the time, were serving lunch. Zoey believed differently. Research showed that no one in Manchester was baking their own bread. Oh yes, they all said ‘Fresh Bread Baked Daily’, but upon examination, what was really happening was the bread was frozen, proofed, then baked. Nobody was baking a full loaf of fresh bread from scratch. We began with that concept, and to this day it continues. Today, Zoey’s Deli dominates the lunch trade in Manchester. Zoey’s Deli is the predominate lunch force in central Vermont and has entered the breakfast business too. A lot of restaurants have tried to emulate Zoey’s, but they don’t execute. The original Double Hex was established in the early 70′s with “Big” John and Lucy as your hosts. “Big” John and Lucy were well known for their great burgers and welcoming hospitality and Double Hex became a favorite place for locals and visitors alike. The name Double Hex refers to the two adjoining hex shaped structures, visbily noticeable from the outside. The literal meaning of Double Hex is double welcome from the Pennsylvania Dutch. Zoey’s Double Hex was established in the spring of 2000 and has carreid on “Big” John and Lucy’s tradition of warm hospitality and great food.
