Our Homemade Ricotta Gnocchi was a huge leap for us because it was our first pasta, made in house. The difference in quality was so astounding that it forced us to start the move away from boxed dehydrated pastas. We’ve since started using fresh rigatoni and spaghetti as well. Yes, it did affect our cost and our labor but it is SO worth it. This is just another step in our consistent pursuit of improving every aspect of the product we put out. Enjoy!

The feeling of appreciation for something that you worked so hard on is euphoric. NY plain pies have been flying out the door like frisbees and we can’t thank you enough for it. Something to remember, our NY Plain is ALWAYS charred and well done, covered in basil and a boat load of freshly grated parmigiana. Guess what, if you want it cooked a little less or with a little less basil or cheese, it’s not our style but we would be happy to do it for you, just ask!

What a night last night was! We were SLAMMED and it was truly NY Plain’s night to shine, with big brother, Bar Pie there to help show her the ropes and what it’s like to be a star. We sincerely appreciate everyone’s patience yesterday as we introduced a new member to the Mezza pizza lineup. The only thing better than the charred crusts filling up our ovens was the MASSIVE feedback afterwards. We have been getting DMs all night and all day about how much people enjoyed their pies. Good news, we’re ready to do it again tonight!

Meet our NY Plain Pizza

More than a decade ago, I called Di Fara in Brooklyn, widely recognized as the world’s best pizzeria, and asked if I could pay to work there for a summer. Legendary pizzaiolo Dom DeMarco’s daughter, Maggie, called me back. That conversation began years of sharing pizza photos, talking ingredients, and learning from a family whose work I admired.

Their influence helped shape our “NY Plain Pizza”. After years of testing, we’re proud to share it: a charred crust, fresh basil, and Parmigiano grated over the top.

What started as Randy taking home packs of boxes to practice, ended with him making boxes with on TV. What an insane time to be alive, us wearing masks and all.
