Mole Verde- Mole(poblano, red, black or green)is the national dish of Mexico. Mole verde originated in the Oaxaca region of Mexico, getting its name from its color.

Most common with chicken. Ingredients are :bay leaves, tomatillos, pumpkin seeds, poblano peppers, jalapeño or serrano peppers, garlic, cilantro, oregano, peppercorn, lettuce and spinach.

Served rice and black beans and CORN Tortillas.
