The Story Behind SoHo
Growing up, my mom used to make these incredible beef dumplings—ground beef, cilantro, cabbage, green onions. Always boiled, never pan-fried, and always ready to eat. As a hungry kid, I could put away 20–30 in one sitting. I think my personal best was 45 😬. And like all great moms, she just kept making more.
When I left for college, she started freezing freshly wrapped dumplings so I could take them with me. It didn’t take long before my roommates caught on—some tried to trade meals, others even offered cash, just to get their hands on MaMa So’s dumplings.
Years later, after teaching abroad and preparing to move back to the States, I started thinking: maybe food is what I want to do (terrible decision 😀). But I figured, hey, these beef dumplings already had years of unofficial approval from friends and hungry college students, so why not?
That’s how the SoHo cart was born—starting with those same beef dumplings and expanding to the variety you see today.
Eventually, dumplings proved way too labor-intensive (you try hand-wrapping hundreds), so now they only make a comeback for specials, weddings, or when we’re feeling nostalgic (or guilty 😅).
And that’s how it all started.
