Eggplant parmesan with spaghetti squash.

Recipe:
Roast spaghetti squash in oven 375 for about 1 hour drizzled with your choice of oil and salt.
Slice Eggplant into thick slices. Set aside.
Mix powdered onion, powdered garlic, paprika, salt, Italian seasoning, and all purpose gluten free flour into a bowl. I added nutritional yeast and follow your heart grated parmesan, but this is optional. Pour milk alternative into the mixture and mix until the consistency of thick pancake batter. Dip each piece of Eggplant into mixture and immediately place into gluten free panko crumbs, then on a sheet pan. Bake at 350 for 15 minutes per side. Drizzle with oil and bake at 425 for 10 minutes per side. Drizzle with oil when you flip it.
Mix the sauce of your choice with the spaghetti squash you have already prepared and top your Eggplant with the spaghetti squash when it comes out of the oven.

Teriyaki potatoes, zucchini, broccoli, cauliflower, and mushrooms. When "I don't know" is for dinner in my house we stir fry!
