My weekly special at , inspired by ! Poor Man's Burnt Ends! I had a little battle with some wind but they still came out great. Coated with SPG, confit in beef tallow, finished with a bbq sauce I mixed up. Excellent! Best Wednesday special I've done next to my smash burgers last week! Thank you Brad for the inspiration and know how to make this happen. Everyone was impressed!
