Just in time for a weekend of MARCH MADNESS AND WARMER TEMPERATURES as SPRING moves in.

This pasta salad will give a tasty twist to your menu. Find it locally in NC, order online or stop in at the Lunenburg Diner.

Summer Chili Pasta Salad

Ingredients
• 8 oz rotini pasta, cooked & cooled
• 1 cup cherry tomatoes, halved
• 1 cup cucumber, diced
• ½ cup yellow bell pepper, diced
• ¼ cup black olives, sliced
• ⅓ cup feta cheese, crumbled
• ⅓ cup Chili Kickstart sauce
• 2 tbsp olive oil
• 2 tbsp fresh parsley, chopped
• Salt & pepper to taste

Instructions
1. In a large bowl, combine pasta, tomatoes, cucumber, bell pepper, olives, and feta.
2. Drizzle with Chili Kickstart sauce and olive oil.
3. Toss until evenly coated.
4. Sprinkle with fresh parsley.
5. Season with salt and pepper as needed.
6. Chill for 30 minutes before serving for best flavor.
