Just baked this Classic 7Up Pound Cake with a Citrus Glaze - an absolute treat! Perfect for any occasion.
Ingredients:
3 cups all-purpose flour
3 cups granulated sugar
5 large eggs
1 cup unsalted butter, softened
1/2 cup shortening
1 cup 7Up soda
1 teaspoon vanilla extract
1 teaspoon lemon extract
Directions:
Preheat your oven to 325°F (165°C). Grease and flour a bundt pan.
In a large mixing bowl, cream together the butter, shortening, and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Gradually add the flour to the mixture, alternating with the 7Up soda. Begin and end with the flour.
Stir in the vanilla and lemon extracts.
Pour the batter into the prepared bundt pan and spread it out evenly.
Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
