My name is Nicole, and I’m the owner and pastry chef behind CoLee’s Artisanal Pastries.

After graduating from The Culinary Institute of America and spending over a decade working my way up to Executive Pastry Chef at Pebble Beach Resorts, I followed my dream of building something of my own right here in Louisville.

At CoLee’s, I create small-batch pastries, cheesecakes, cakes, bagels, muffins, and seasonal desserts using professional techniques and high-quality ingredients. Every item is made with the same care and attention to detail that I learned throughout my pastry career.

Last night’s cake decorating class was such a great time MESA, A Live Dining Show with Billion Cup Coffee ! 🎂✨

I loved seeing everyone’s creativity come to life as they learned piping techniques, decorated their own cakes, and enjoyed an evening filled with sweet treats and good company.
