Hi Tim Spong here, owner of Gia’s Wings. Opening in next two weeks after a 9 month journey! The menu features:
1. Golden Pig award winning charbroiled chicken wings [full disclosure the Golden Pig award was a church barbecue contest but in a hotly contested field nonetheless]. Also have fried wings. Served with 5 scratch sauces (ranch, horseradish, buffalo, peach and honey mustard).
2. Triple cooked beef tallow french fries - we take fresh potatoes, which are then cut, soaked in icewater, boiled in water, vinegar and salt, then blanch fried then final finish fry - using real beef tallow. The result of this process is a very crisp, delicious French fry. You can round it out with melted cheese to make them cheesy fries.
3. Chicken sandwich fried or grilled. Batter is organic flour, salt, pepper and 8 other spices, dipped in buttermilk, served on brioche bun with romaine lettuce, pickles, sliced tomatoes and avocado mayonnaise as well as your choice of one of 5 scratch sauces and optional melted cheese.
4. Funnel cake. Prepared with organic flour, vanilla, pasture raised organic eggs, agave and topped with powdered sugar - add whipped cream, fresh strawberries or blueberries as you like.
5. Popcorn. Made fresh in the food truck seasoned with salt and real butter. Add fresh grated Parmesan if you like.
6. Kids menu - chicken nuggets, Piner sandwich (a half size chicken sandwich on a Hawaiian roll) and “scraps” (1 chicken wing, 2 chicken nuggets, small portion of fries, lettuce, pickles and tomato slice as well as choice of scratch sauce).
